Easy Beef and Veggie Meal

When I first got the divided baskets from Kindsay, I knew the possibilities would be endless for developing recipes that would help you all spend less time in the kitchen! What a cool accessory, and now that I’ve had them for a while, I wasn’t wrong! It’s so easy to divide the food up, using it either to keep foods separate OR to help make different cooking times for different ingredients a breeze. 

And it doesn’t get much simpler than this recipe. Four simple ingredients and you have a full meal on the table. Healthy nutrition for your family, and an easy recipe that means you spend more time hanging out with your family and less time working over a hot stove in the kitchen. 

Our family eats a variety of meals, but when in doubt, we tend to gravitate toward hearty beef dishes. Our farmer buddy raises hogs and cattle, and we typically get a half of a hog and a quarter of a cow each year to stock our freezer. Lots of delicious, juicy roasts from the cow mean we can experiment a lot in the kitchen with different meal ideas. Of course, for a while, we were in a rut of your standard beef stew/crockpot type meals (roast, carrots, onions, potatoes and broth). Delicious, but easy to get bored of in a hurry. 

This meal fits my standards of a perfectly balanced meal. Plus it includes one of my favorite veggies – broccoli (which when cooked properly in the Instant Pot turns a GORGEOUS green). 

If you’re thinking it’s TOO simple, you can always jazz it up with some extra seasonings. Other adjustments can be made as well – we rarely eat white potatoes, which is why I chose sweet potatoes for this recipe (plus, we just like them better AND THEY ARE HEALTHIER!) But if you want, absolutely sub russets or new red potatoes.


  • 1.5 pound beef chuck roast
  • 1 large sweet potato
  • 1 small head broccoli
  • ¾ cup Italian dressing


  1. Add 12 oz beef broth to inner liner of Instant Pot.
  2. Cut up roast into 1 inch cubes and marinate for at least 30 minutes in Italian dressing (the longer the more flavor you’ll get!)
  3. Cut broccoli and sweet potato into bite sized chunks. If desired, toss sweet potato with  little olive oil, salt and pepper (or you can season after cooking). 
  4. Place broccoli in one divider, and the sweet potato in another.  Set aside.
  5. Add beef to one section of the divided steamer basket, lower into inner liner of Instant Pot. If there is an Italian dressing remaining, add that to the inner liner as well.
  6. Set to high pressure for 50 minutes.
  7. Use natural pressure release for 10 minutes, then quick release remaining pressure.
  8. Place basket with sweet potato in Instant Pot (do not remove beef) and set to high pressure for 20 minutes.
  9. Use natural pressure release for 10 minutes, then quick release remaining pressure.
  10. Add basket with broccoli to Instant Pot (do not remove potato or beef) and set at high pressure for 3 minutes.
  11. Use quick release or natural release. Season sweet potato and broccoli as desired and enjoy!

Note: this recipe makes enough veggies for 2-3 servings, but you will have leftover beef. Use that to make egg bites!
