Did you know that adding fruit like pineapple to a meat recipe does more than add a sweet flavor to the meal? Fruit’s acidic nature actually helps tenderize the meat even further. By combining pineapple with chicken in this Hawaiian-style Instant Pot recipe, you’ll get super tender, super delicious results.
I’m not a huge fan of fruit with meat, but even this recipe, with the sweet and spicy combination made me want to try it out on my family. Huge hit! I hear all the time that it’s easy to get into a rut with chicken recipes. This one is definitely outside the norm but easy and fast to prepare.
Prep Time: 10 minutes
Cook Time: 10 to 15 minutes
Total Time: 20 to 25 minutes
- 3 pounds chicken pieces
- 1 cup barbecue sauce
- 2 cups canned pineapple tidbits with juice
- 1 cup coconut milk
- 1 teaspoon chili flakes
- Shredded coconut
- Lime juice
Step 1 – Mix together the barbecue sauce, coconut milk and chili flakes together in a bowl.
Step 2 – Place pineapple in the Instant Pot.
Step 3 – Coat chicken with barbecue sauce mixture. Place each piece of chicken inside Instant Pot one by one. Pour any remaining barbecue sauce into the pot.
Step 4 – Close the lid securely and the vent. For a thicker sauce, set the instant pot to “browning.” Set timer for between 10 to 15 minutes.
Step 5 – After the timer gets to zero, open and remove the chicken with tongs. Flip the chicken over one by one to make sure that each piece is evenly covered with sauce.
Step 6 – Garnish the chicken with shredded coconut and lime juice.
Step 7 – Serve and enjoy!
