National Sweet Corn Day

Where I live in the Midwest, three things reign supreme – green and yellow tractors, the hard-working farmers, and sweet corn that can make your toes curl it’s so sweet. When it’s sweet corn season, we enjoy it several times a week because that time comes around for just a few weeks every year. Today is National Sweet Corn Day and I’d like to share a unique way to season your cobs that have been cooked perfectly in the Instant Pot. Wait, you’ve never cooked corn on the cob in the Instant Pot? Well, I’ll teach you!

Many people find boiling corn on the cob takes long than they would like, so they rely on microwave cooking, which can often lead to overcooked and starchy kernels. The Instant Pot solves both problems by speeding up the cooking process but retaining those crisp kernels that just burst with sweetness.

I have a 6 qt. Duo IP, which recommends 18 oz. of liquid. In this recipe I made six ears of corn but you could increase that (without adding additional water or cooking time) and still have great results. Cook what you need! 

This recipe developed out of an often-used popcorn seasoning in our house. You can alter the spice (or eliminate it completely if you’re not into spicy heat).

Ingredients and Instructions: 

  • Chilamesan Iowa Corn
  • 6 ears sweet corn, shucked and silks removed
  • 18 oz. water
  • ¼ cup grated parmesan cheese
  • ½ tsp chili powder (I’m a huge fan of Penzey’s spices)
  • ½ TB melted butter.

Place ears in Instant Pot, pour water over ears. Close lid, set for high pressure for two minutes. Use quick release.

While cooking, mix butter, cheese and chili in a small bowl until it resembles a paste. Gently dry the cooked corn with a paper towel and spread paste on each ear. Enjoy!

I know, I know, you’re thinking, “But corn is high in carbs! I want to eat healthier!” Remember that carbs are not something to avoid completely – we need carbs for energy. We also have to remember balance – we need to enjoy the food we eat and not deprive ourselves ALL the time. Corn is a vegetable after all, and provides important nutrients and is perfectly healthy in moderation.
